Ready for a delicious meal? This recipe is pretty flexible because it doesn't call for a particular cut of beef. This is the perfect Instant Pot recipe for a ribeye steak, round steak, swiss steak, skirt steak or flank steak. Give this Instant Pot Steak recipe a try for dinner tonight.

If you'd like, you can add a splash of Worcestershire sauce to the beef stock for extra flavor in the recipe. If you don't have beef broth, you can use a cup of water or...but really, we're all about the flavor! Just make sure you add a cup of liquid- whatever it is.
We also saute the steak on both sides before we cook on high pressure, so turn on that saute function (or a hot skillet), add in a splash of olive oil to the inner pot, and season steaks with salt, black pepper, and maybe some garlic powder to prep the perfect flavor combination.

Start by patting dry your steaks, and then season them as directed. I tend to liberally season the steaks to help lock in all the flavor!
Now you will add some oil into your Instant Pot and turn the saute feature on.
You will then place steak in the Instant Pot to sear the steaks on all sides. This will create texture and lock in tons of flavor from the seasonings.
Once done, pour in your water or broth, and deglaze the pot. You need to do this to prevent the burn notice from stuck on bits.
Place trivet in the pressure cooker, and then sit the steak on the trivet.
Pressure cook the steak as directed, and then remove the steak and let it sit for 5-10 minutes.
If you want to make gravy, turn the Instant Pot to saute, and sauté the onions and mushrooms. Or, sauté the onions and mushrooms on the stovetop while the steak is pressure cooking.
Then, you'll create a cornstarch slurry you stir in to the hot mixture. It will thicken, and you can pour over your steaks.
Storage
Don't plan to eat all your steak and gravy right away? No problem! Just take any leftovers and place in the proper airtight container and refrigerate for up to three days.
Then when you want to eat, reheat on the stove or in the microwave.
If you find the gravy is too thick add a splash of broth to it, to thin it up. Whisk until lumps are gone and pour over the steak.
Variations
- Skip the gravy if you don't want to serve it with a brown gravy.

Ingredients
Pressure Cooker Steaks
- 2 (6-8 ounce) ribeye steaks
- 2 tablespoons unsalted butter
- 1 tablespoon steak seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup beef broth
Mushroom onion topping
- 2 tablespoons salted butter
- 1 medium red onion
- 1 tablespoon minced garlic
- 2 cups sliced mushrooms
- 1 tablespoon cornstarch
- 1-2 tablespoons water
Instructions
- Pat the steak dry with paper towels.
- Rub the steaks with the salt, pepper and steak seasoning.
- Set the Instant Pot to saute and then add the butter.
- Put the steaks in the Instant Pot.
- Sear each side for 2 minutes, and then remove the steaks from the pressure cooker and place them on a plate.
- Add the broth to the pot and then scrape the bottom of the pot to deglaze.
- Put the trivet in the pot. Position each steak on the trivet.
- Put the lid on the Instant Pot.
- Turn the vent to seal. And then set to pressure cook on high for 5 minutes.
- When the pressure cooking time finishes, do a natural release for 5 minutes.
- In a large saute pan add the butter and onions. Cook for 6-7 minutes on medium heat until onions are translucent.
- Add the minced garlic and mushrooms, toss to combine. Cook the onion mixture for an additinal 5 minutes.
- Mix the corn starch with water until smooth and then add the corn starch slurry to the and toss to combine until mixture is thickened.
- Remove the steaks from the Instant Pot.
- Plate the steaks and then top with the onion mushroom gravy.
